LAKSA NOODLE SOUP
Ok look I know its another soup. But its just a little phase im going through at the minute (also trying to clear the freezer out and i have alot of chicken stock in there ok!)
This is far from traditional and i 100% acknowledge this. But whats good is you probably have most of these ingredients in the pantry.
Feel free to substitute the chilli sauce for a few fresh chillis if you have those. I just didn’t have any and the thought of leaving the house in the grim weather to queue outside a shop didn’t fill me with joy.
Also note the recipe can include anything you want. So adapt as you choose. I had crispy fried tofu the first night and then prawns and fish the next day (as by that point i had finally walked down to @fcsoper_fishmongers)
This gives you about 6 bowls worth. So you could always freeze the extras or eat it for days on end!
Laksa Paste
4 tsp hot sauce
1 tbsp fish sauce
3 shallots
4 cloves garlic
Thumb of ginger
2 lemongrass stalks
2 tsp turmeric
2 tsp coriander, ground
1 tsp paprika
Choice of 3 tbsp sunflower/ rapeseed/peanut oil
Soup
3 tbsp sunflower/ rapeseed/peanut oil
1.4L Chicken/Veg stock
8 Kafir lime leaves
1 tbsp sugar
2 cans coconut milk
1-2 limes, juiced
400g vermicelli rice noodles
Salt
Toppings
Choice of fried Tofu/ Prawns/ Fish/ Mussels/ Chicken/ Mixed Veggies

Firstly get all the ingredients for the laksa paste and throw them in the blender and blend on high until smooth, add a splash more oil if struggling to get it smooth.
Get a large pan on a medium heat with the oil and fry off the paste for about 3 mins.
Then add the chicken stock, kaffir lime leaves, sugar, coconut milk, salt. Simmer this base for about 40 mins. Add the lime juice. Taste it, see if it suits your taste. You can always add more chilli, salt, fish sauce (or anything else that takes your fancy).
Cook rice noodles according to pack instructions.
Then depending on what you're having on top, prepare and cook that. You could fry the tofu for crispyness or chuck it in a few minutes before the end. For prawns/ fish/ mussels/ veggies chuck those in and simmer for 5 mins. Grill/ fry/ roast your chicken.
Put the cooked noodles in a bowl and cover with broth and your chosen topping/s.
Serve with coriander, sliced spring onions and thinly sliced chilli's. Eat and enjoy!
