Granola

This year I have been trying to eat more seeds and nuts. I will leave the why to the experts like @olgabondenutrition. I struggle to find a way to sneak them into meals. But I have found granola is the PERFECT way to really enjoy eating them.

Granola is super simple and I have no clue why people buy those overpriced boxes of it! Buy your nuts and seeds in bulk there are plenty places where you can do this and buy broken brazil nuts for neary half the price. Oh and stay away from those fancy packaged seed blends or mixes, they are way overpriced!

Maple syrup and honey make it super moreish!

Here’s mine topped with yoghurt and poached rhubarb from @shrubprovisions but you can just serve with milk or anything else you fancy!

Ingredients

300g oats

30g sesame seeds

30g linseeds

50g pumpkin seeds

50g flaked almonds

75g Brazil nuts, roughly chopped

100g dried fruit (I like raisins and currants)

50g coconut chips

125ml maple syrup

3 tbsp veg oil

2 tbsp honey

1 tsp salt

Method

  1. Weigh out all dry ingredients, except for dried fruit and coconut chips. Mix well.

  2. Mix honey, oil and maple syrup and pour over dry ingredients, mix well coating everything evenly.

  3. Lay out in a thin layer on two trays. Bake at 160 degrees for 20 minutes, turning every 5 minutes. Toast coconut chips separately for 5 minutes or until golden brown.

  4. Take out of oven and mix with the toasted coconut as well as the dried fruit.

  5. Let cool and serve with whatever you fancy (I stewed some rhubarb and had it with yoghurt).

  6. Store in air tight container. It keeps fresh and crunchy for a few weeks.
