CRANBERRY, RICOTTA AND BUCKWHEAT PANCAKES

So this was a bit of a rejig of a recipe i saw this week in @waitroseandpartnersmagazine. Our favourite of all food magazines to be honest.

I made it gluten free and tweaked it a bit.

Good thing about using cranberries instead of the classic blueberries is that they are in season in the UK October- December unlike Blueberries which if you are eating those ATM are probably being flown in from the other side of the world.

Also they have lots of Vitamin C packed into them, so great for cold and flu season!!

I made this gluten free with the buckwheat flour but you could use white or wholemeal flour instead.

Makes 8 pancakes (which in my book is for 2 people)

150g cranberries
60ml maple syrup, plus extra for drizzling
2 eggs, separated
125g ricotta
50ml milk
70g buckwheat flour
0.5 tsp baking powder
0.5 tsp bicarbonate of soda
25g butter, plus extra for cooking
2 tsp buckwheat toasted, to serve

1. Get the cranberries in a small saucepan on a medium heat with 25ml of the maple syrup. Cook for about 4 minutes until the cranberries start to burst. Remove from heat.
2. Using electric beaters whisk up the separated egg whites and a pinch of salt, until soft peaks form.
3. In a second bowl using the same beater mix up the egg yolks, ricotta and milk. Beat in the flour, baking powder, bicarbonate of soda until smooth. Fold in egg whites and half of the cranberries into this.
4. Return rest of cranberries to pan and add 15g butter and 35ml maple syrup on a low heat for 3 minutes.
5. Get your large non stick or cast iron pan over a medium heat. Add 10g butter to pan and 1 tbsp of mix per pancake, depending on the size of your pan 2-3 will fit. Cook them for 2-3 minutes on each side. Keep them warm on a plate with a tea towel over them.
6. Serve with the cranberry compote and a 1 tsp of toasted buckwheat on top and a drizzle of more maple syrup.
