BASIC BITCH SHAKSHUKA
Sure Shakshuka is all over the shop these days but that doesn’t stop it being the queen of brunch.
Also great for a quick easy dinner. Whenever I make it i make double the sauce and freeze some for another time.

As you will see, this recipe uses cumin seeds and coriander seeds which are toasted and freshly ground.
You can always just sub for pre ground coriander and cumin. But by grinding spices freshly like this you really will notice the difference in flavour.
This recipe can be a little on the hot side so if you don’t like spice maybe dial down on the harissa and/or chilli flakes.
Makes enough for 4
3 tbsp Extra virgin olive oil
1 Red onion, diced
3 Red peppers
5 Garlic cloves, minced (yes, 5!)
2 tsp Paprika
1 tsp Aleppo chilli flakes
3/4 tsp Chilli flakes
2 tsp Cumin seeds
2 tsp Coriander seeds
2 tbsp Harrisa paste
4 tbsp Tomato puree
1L Passata
Handful of chopped mint
Eggs
Salt
1. Start by toasting your cumin and coriander seeds in a hot dry pan. Toast until they start to smell and brown a little but careful to get them out before they burn. Grind them in a pestle and mortar. (Or skip this step if using pre-ground spices.)
2. Dice red onion, get a saucepan with the oil on and fry off on a medium heat for 5 mins.
3. Add the ground cumin, coriander, paprika and chilli flakes into the onions. Cook for another 5 mins stirring every so often.
4. Chop your peppers and add to the pan along with your garlic.
5. Cook for 5 mins, add the harissa and tomato purée. Cook for another 5 mins.
6. Add the passata, season and put a lid on, let this cook for between 30-60 mins (depending on how much of a rush you’re in.)
7. Use anything that can go in the oven. Put the sauce into the oven proof dish and make small wells with a spoon for as many eggs as you desire. Cook at 180 degrees for 8-12 mins in the oven. Check them throughout to see if they have set properly. The eggs should be have a bit of wibble to them.
8. Serve with toast or flatbread. Chop mint on top. Enjoy!
